change jobs before filing I-485?

Hi, I am planning on changing jobs before I file I-485. Can I do that?
My field in EB1A is mechanical engineering and I want to join a start up doing kind of data mining/analysis related work.

to Ernest:

To my knowledge, EB-1A is self petitioned, so yeah, you can change jobs but you cannot change your field of expertise.
