I was wondering if it is necessary to be employed throughout the NIW process. I might lose this job soon. Can someone clarify?

Not necessarily. Since you don't need a sponsor for NIW, you can change jobs or be unemployed for a while. But I'd still recommend finding a new job asap. Being unemployed never looks good. Oh and make sure it's a similar job to what you have now. You can't change to a toally different job
